4 very ripe (almost black) bananas
1/3 cup oil
1/2 - 3/4 cup maple syrup ( can be 1/2 honey)
1 teaspoon vanilla extract
1 teaspoon baking soda
pinch of salt (about 1/4 teaspoon)
1 1/2 cups whole wheat flour
1/2 cup nuts (walnuts are my favorite)
1/4 - 1/2 cup dried, chopped dates
Preheat oven to 350 degrees F.
Oil a loaf pan.
In a large mixing bowl mash bananas really well. Then move down the list stirring after each ingredient. Pour the mix into the pan and bake for 1 hour.
Enjoy for breakfast or a snack!
