Baked Tofu-Great for Sandwiches!

What you need: 

1 lb block of tofu
soy sauce

What you do: 

Cut the tofu into 1/4-1/2 slices, and press between layers of paper towel or clean kitchen towels for about 1-2 hrs. Marinate in soy sauce for anywhere from 2 hrs to overnight, depending on how strong you want the flavor. bake at 350 until the tofu is lightly browned and has a chewy texture. to make sandwiches, place 2 or 3 slices of tofu on a piece of vegan bread and top with ketchup, lettuce, and another slice of bread.

This was great! I used Bragg's instead of soy sauce, though. I pressed my tofu and then cut it into cubes. I marinated it overnight in Bragg's, along with a splash of sesame oil and some powdered ginger. I baked it the next day at 350 for about 80  minutes or so (after 50 minutes, it was still sort of soft and spongy). My only complaint (and it's a minor one) is that it was SAAAAAAAAAALTY!! Do you think using a combo of half water/half Braggs or soy sauce would help? I don't know if the water would make it bad somehow. Anyway, thanks for a simple, delicious recipe!

Excellent. I followed the advice of other reviewers... a little garlic and vinegar, pepper... Goodness you would have thought we were a starving family the way we attacked this dish.
