Avocado Spring Rolls

What you need: 

4 spring roll wrappers
2 large avocado, pitted and sliced
2 garlic cloves, chopped
dash hot sauce
1 cup vegetable oil

What you do: 

1. In a bowl with warm water, place a spring roll wrapper. Leave it in the water for 15 seconds, or until the wrapper just becomes pliable. Remove wrapper and place on a plate.
2. In the center of the spring roll wrapper, place a fourth of the avocado. Add a fourth of the garlic and hot sauce. Wrap spring roll making sure to close ends. Repeat till avocados are all used.
3. Heat oil in pan. (I prefer grapeseed oil. It has a milder flavor than olive oil and is a bit more healthy.)
4. Fry avocado spring rolls till all sides are slightly brown and crispy. You can enjoy this with the dipping sauce of your choice. I prefer them plain.

SO HOW'D IT GO?

@veggietable: From the photo of the recipe, these rolls are not made with rice paper.  You can find the normal flour-made spring roll sheets in Asian stores or simply use Mexican taco/tortilla wraps to substitute. :-) Good luck & have fun cooking!! Wink

I love these rolls =), I add shredded carrots and slices of cucumber if I have time. But the original recipe is awesome!! Mine looked kind of funny too at first but after the 4th time, using tongs and turning them they turned out looking almost as good as they taste =)

although mine didn't turn out very pretty, they sure were tasty! i think i'll add some cabbage or bean sprouts next time for a little crunch! i made miso soup and pad thai with these and it was THE perfect birthday dinner!!  ;)b

I've been having a lot of trouble frying rice paper rolls. They bubble up and pop, or one side gets too gooey and breaks open.  :P Could I be using the wrong wrappers?

This recipe on my blog states egg rolls. I think my recipe may have been changed to say spring rolls because it said the word egg? I'll see if it can be changed to vegan egg rolls(which will sound confusing :))  Egg rolls are heavier than spring rolls or rice paper. You can find egg free egg rolls at Asian markets and sometimes, if you're lucky, in the Asian section of a regular market. I heard Whole Foods has some too. Those will fry much better.
