Avocado, Mango, and More Salad

What you need: 

juice of 2 limes
1 mango, diced
1/2 cup red onion, diced
1 red or orange bell pepper, diced
1 can (15-ounce) yellow corn
1 can (15-ounce) black beans
1-2 fresh jalepenos, minced
1/4 cup good olive oil
1/2 teaspoon pepper, or to taste
1 teaspoon salt, or to taste
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon garlic, minced
1/2 lime zest
2 ripe avocados, 1/2" diced

What you do: 

1. Combine all of above ingredients except the avocados.
2. Let sit in refrigerator for flavors to combine.
3. Just before serving, cut and add the avocados - or you may cut them earlier and place them in a separate container. Either way, remember to spritz with some lime juice to keep the color bright.
Good recipe for substitutions - add whatever you like. Beautiful colors for a party dish too. Enjoy!

SO HOW'D IT GO?

This salad is AMAZING!!!  Fast, fresh, and healthy.  And colorful!  Would make for a GREAT potluck dish, but is also a very filling dinner meal.  I add a little chopped cilantro to mine.  Thanks for posting!

:o  Oops - my recipe, but forgot to add that I usually include 1 pint of grape tomatoes, halved.
