Apple Cinnamon Pancakes

What you need: 

1 cup unbleached all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
2 tablespoons vegetable or olive oil
1 cup vanilla nondairy milk (I use soy)
1 teaspoon ground cinnamon
3 tablespoons apple sauce
1/2 teaspoon pure vanilla extract

What you do: 

1. Preheat an oiled griddle until hot. Combine the flour, vegan sugar, baking powder, salt, oil, and nondairy milk in a bowl and mix thoroughly.
2. Mix in the ground cinnamon, apple sauce, and vanilla extract until smooth.
3. Pour about 1/2 cup (for big thick pancakes) onto prepared griddle. In about 2 minutes, bubbles will appear on the upper surface of the pancake, flip the pancake with spatula. Cook for another 2 minutes.
Tastes great served with maple or fruit syrup.

SO HOW'D IT GO?

I made these this morning for my omnivorous bf and I with a few little changes- used a 1/4 cup of sugar, a dash of ginger, no oil, and a 1/4 cup of unsweetened applesauce instead. I also peeled and cored an apple, sliced it, and dropped an apple ring in the middle of each pancake as it cooked. I got seven small to medium-sized pancakes. we ate them topped with blueberry sauce and they were awesome. the apple rings tasted like apple pie apples, warm and a little bit firm. yum!

oh my these were delicious!!!  They tasted incredible, though for a family of 4 I would recommend doubling the recipe

Wonderful!  These were the best apple pancakes I have ever had!  My family loved them.  I doubled the recipe, and it made a ton.  I did make a few changes.  These changes are based on doubling the amounts in the original recipe.  I used a 1/2 cup of sugar, 1 teaspoon of kosher salt, 1 teaspoon of freshly ground nutmeg, and  one diced Fuji apple.  I also substituted almond extract for the vanilla and I used cinnamon applesauce instead of plain applesauce.

Like others, I increased the sugar.  Should've added sliced apples, yum!  I did increase the applesauce by nearly double to get as much apple flavor as possible.  I also increased the cinnamon - would increase it even more next time. 

Serving suggestion - top the pancakes with more applesauce, a little vanilla Silk yogurt, and a sprinkling of cinnamon - mmmmmm.....!

the BF and I tried these a couple weekends ago for breakfast. i always get nervous to make pancakes because my dad always made them for me so i don't necesarily know how to cook them correctly, but these came out looking absolutely perfect!

they made the house smell delicious and with the amount of batter, we came out with 6 large pancakes (used a 1/4 cup scoop)

i liked them but next time i might put a little less cinnamon in there because they had that kind of cinnamon bite to them and i like a sweeter cinnamon taste. and i'll have to remember to put syrup on as i go because they absorbed it very quickly and became soggy.

but this recipe is delicious and ihad to keep myelf from eating them right off the plate while the others cooked  :)
