Coconut Lime RiceIngredients (use vegan versions): olive oil for sautéing
1 tablespoon ginger, peeled & minced
1 cup basmati rice
1 cup water
1 teaspoon salt
1 can light or regular coconut milk
1 tablespoon lime juice
2 cup spinach, de-stemmed
1 teaspoon sugar
Directions:Heat oil in a medium pot or pan. Add ginger and rice, and sauté for 30 sec-1 min. Add water, 1/2 teaspoon salt, and 1 cup coconut milk. Bring to a boil, reduce heat, and cook until rice is tender (about 15-20 mins). While rice is cooking, add rest of coconut milk, remaining salt, lime juice, spinach, and vegan sugar to a food processor or blender and puree. When rice is done cooking, add puree to pot or pan, and simmer a few additional minutes to allow the flavors to blend.
I don't know where I originally got this recipe, but it has fast become one of our favorites. Yum!
Serves: 4
Preparation time: 30 mins
We made this last night with a few modifications. My boyfriend is not a huge fan of ginger so we sauteed up a little onion and garlic instead, along with half a minced Thai chili. I didn't really know what to expect, since most of the coconut rice I've ever eaten has been really sweet. This recipe is quite savory, howe'ver, and boy is it delicious. It had an almost risotto like texture-- the coconut milk was a great creamy binding agent. We used lowfat coconut milk and it was just fantastic. Thanks Kathleen!

This was pretty good. Was it supposed to come out such a pretty green color? I'll definitely be making this next St Paddys Day

No matter how much you think you like lime juice, DONT overdo it... I think I will have to make another batch with no lime juice and mix the two, because what I have now is kinda gross. Whoops. It is a lovely colour though... it matched my plate almost perfectly!
