Tasty and Nutritious Patties

What you need:

1 cup cooked basmati rice
2 tablespoons sesame seeds
2 tablespoons sunflower seeds
2 tablespoons nutritional yeast
2 tablespoons bulghur wheat
1/2 cup semolina flour
Egg replacer for 2 eggs
1 teaspoon salt
1 tablespoon paprika
1/2 teaspoon cumin powder
1/2 teaspoon dried oregano (or about 1 teaspoon fresh oregano, chopped fine)
1/2 teaspoon ancho chili powder
Canola oil

What you do:

1) Mix together all ingredients except oil. Add water and mix with your hands until you get a moist, cohesive dough.
2) Heat 2 tablespoons of canola oil in a frying pan over medium-high heat. Form a patty about 1/4" thick using about 1/4 of the mixture. Fry on one side for 2 to 3 minutes, then flip over and fry the other side for 2 to 3 more minutes. Place on a paper towel to remove excess oil. Repeat with the remaining mixture.
Serve with corn salsa, pasta sauce, or other condiments of your choice. This would probably work well as a sandwich patty too.
Source of recipe: This recipe resulted when I was going to make the quinoa cakes from Herbivoracious.com and found that there were bugs in my quinoa. :-( So, I improvised. :-)
