Basic Pasta DoughIngredients (use vegan versions): 1/2 cup semolina duram
teaspoon of olive oil
1/4 cup of water
Directions:combine the above ingredients to make a dough. wrap in a towel and let sit for 30 minutes. [start the sauce heating...]
after the 30 minutes, [start the water boiling] divide the dough in half and roll out each half, allowing the first sheet of pasta to sit while rolling out the second.
when the sheets are dryish, cut according to how you like your pasta.
the pasta maker recommends rolling, and folding in half before rerolling. after rolling you are supposed to sprinkle some flour betwixt the two halves. if you create a dry enough dough, the you do not need to do this. in fact, the first time through the rollers, my dough is pretty crumbly at the edjes, but a few more passes makes the dough much more workable.
cook for about 2 minutes.
Better using strong flour eggs and no salt.

You can't use eggs, this is a vegan site. Has anyone had luck with soya flour or other substitutes? I've just started experimenting with this.

I tried using soy (soya) flour mixed with white flour once but it made the dough very sticky and impossible to work with. I might try again with a combination of semolina, soya and wheat flour. Make sure you mix the flours together well before adding water. Soya and gluten flours tend to gum up and not mix well.

Would whole wheat flour work? And can someone tell me how to flatten the dough to very thin without using a pasta press thing? Would a rolling pin would work w/o tearing it?

Vegetasia1:Yes, you can use whole wheat flour, and yes, you can use a rolling pin, but you probably can't make it quite as thin. You can sprinkle some flour on the dough, or rub some on the rolling pin if it looks like it would stick. Good luck

I tried it and if you are using all that water, you need more flour. I even mixed in a little regular all pourpose unbleached flour

I just got a pasta machine for Xmas! So I made this and it was AMAZING! I also thought that it seemed like a lot of water, but I searched online...and these are the correct measurements, actually many how-to websites say to resist the urge to add more flour, its all in the kneading, if its too wet, just keep kneading!
