Garden Fresh SalsaIngredients (use vegan versions): 2-3 medium tomatoes, quartered
1 small red onion, quartered
1 clove garlic
1 mild green chili, seeded & cored
1 handful cilantro
20 stalks fresh dill, optional
1 tablespoon white vinegar or lime juice
1/2 teaspoon salt, or to taste
1/2 teaspoon sugar, or to taste
dash cumin
dash paprika or chili powder, to taste
Directions:Place garlic and chili pepper in food processor. Process 5 seconds. Add onion and process 5 seconds. Add cilantro and optional dill. Process 10-20 seconds. Add tomatoes and process until correct consistency, stopping occasionally to scrape sides and rearrange any large tomato chunks. Refrigerate at least one hour to allow flavors to meld. Yum!
