Garden Fresh Salsa

Ingredients (use vegan versions):

    2-3 medium tomatoes, quartered
    1 small red onion, quartered
    1 clove garlic
    1 mild green chili, seeded & cored
    1 handful cilantro
    20 stalks fresh dill, optional
    1 tablespoon white vinegar or lime juice
    1/2 teaspoon salt, or to taste
    1/2 teaspoon sugar, or to taste
    dash cumin
    dash paprika or chili powder, to taste

Directions:

Place garlic and chili pepper in food processor.  Process 5 seconds.  Add onion and process 5 seconds.  Add cilantro and optional dill.  Process 10-20 seconds.  Add tomatoes and process until correct consistency, stopping occasionally to scrape sides and rearrange any large tomato chunks.  Refrigerate at least one hour to allow flavors to meld.  Yum!

Preparation time: 10 min

As simple as it is, this is hands-down the best most fresh tasting salsa I've come across.  The only modification I made was to add more garlic. This salsa tastes amazing with the Garbanzo Tacos recipe on this website! Smiley

This was great! I skipped the dill, and added twice the cilantro, garlic, and salt -- super fresh and delicious!

This sounds so fresh and delicious! I haven't made it yet, but in this summer heat, it would be the perfect accompaniment to a refreshing summer meal. I love spicy fresh salsa, and this sounds so flavorful!

I left out the cilantro and sugar.  I used a yellow tomato and added a can of tomato sauce.  It was very  very good!

This is the best fresh salsa ever! I was seriously addicted to this over the summer. I omitted cilantro and used parsley instead (because I don't care for cilantro  Tongue)

I also used a bunch of fresh lime juice. Stunning.
