Lentil Shepherd Pie

Ingredients (use vegan versions):

    2 cups cooked lentils
    1/2 cup celery, sliced
    8 oz tomato sauce
    4 medium potatoes, cooked and mashed
    1 medium sized yellow onion, chopped
    2 garlic cloves, chopped
    2 tablespoons nutritional yeast
    olive oil for sauteing
    your favorite herbs - basil, oregano, parsley,

Directions:

Preheat oven to 350 degrees.  Saute onion, celery, and garlic in a little olive oil.  Add lentils and tomato sauce and cook 15 minutes.  Pour into a baking pan and cover mashed potatoes.  Sprinkle nutritional yeast on top of potatoes.  Top with your favorite herbs to taste. Delicious!

Serves: 6

Preparation time: 45 minutes

I made this to bring to my SOs parents house and it was YUMMY!  I was worried there wouldn't be enough of the lentil mixture for my casserole dish, so I added more lentils and some corn and more onions.  So simple and tasty!  Thank you!          ~Chelsea

I leave it in about 30 minutes. Til it looks a little crispy on the edges and browned a bit. I also like to add garbanzo beans to this. Yum!

Thanks for the oven advice.  I left it in 20 minutes and then about 3 under the broiler.  I added a dash of soy sauce to the lentil/tomato sauce mix and it tasted just like my English mother used to make, so yippee!  Next time I'm going to add a layer of carrots under the potatoes.

This was fantastic!  I added some carrots (cuz they're my favorite)and to please the non-vegan husband I topped it with 6 potatoes (cuz they're his favorite)and my, oh, my this is magnificent comfort food for this recent cold snap.  I played with the spices too.  Thanks for taking the time to post this recipe!  I didn't know it, but I'm a huge lentil fan ;- )  hehe

Ground Round is fake meat. I personnally don't like meat substitutes, but I think it would work. From my experience, this recipe is very versatile. Smiley

chaneybeth, before you jump on anyone, give them the benefit of the doubt.  I don't really know a lot about the fake meat products, but I'm pretty sure ground round is the name of a beef alternative that I've seen in recipes on this site (Yves brand, I think).

I have just tried the recipe and it was absolutely delicious.  Can not find nutritional yeast in England though unless anybody can advise otherwise

This is very good!  Yum!  Thanks for the recipe!  I added carrots as somebody suggested and I also added a can of green beans, because that's how dad always made Shepherd Pie.

this was really good. i added more pasta sauce though... but... definitely a good recipe. i left it to bake for 30 minutes. once the pasta sauce started to bubble i took it out.

Kaleigh, you can get nutritional yeast from goodnessdirect.co.uk.  It took me ages to find it, but its worth it just to make macncheeze

I tried this recipe for a thanksgiving dinner and just found it to be unsatisfying.  I added the carrots as suggested by others, but found the recipe to be far too much lentil and not enough taste.  I think my main complaint is that it is simply a little boring.

i just made this and i am very impressed with this recipe! i added zucchini and corn to the onions, and i chopped a bunch of fresh basil, fresh thyme and fresh oregano and put it in with the tomato/lentil/veggie mixture. excellent!

Good base, but needs lots more spice.
Once you add some jazz to this, it's wonderful and tasty!

I just made this for Thanksgiving dinner.. wow! I LOVE it. It has got to be one of the best recipes I've ever made from this site. I used all the herbs suggested and it was just fantastic. I will make this again, thats for sure.
