Really Good Whole Wheat Pizza Dough

Ingredients (use vegan versions):

    1 1/2 cups warm water
    1 1/4 oz envelope active dry yeast
    1 - 2 teaspoons sugar
    2 tablespoons oil (Enova, olive, or canola will do)
    1 teaspoon sea salt
    2 1/2 - 3 cups whole wheat flour
    1 teaspoon gluten
    yellow cornmeal

Directions:

1. In a large bowl (if using Kitchenaid use the mixing bowl to mix ingredients) combine water, yeast, vegan sugar, gluten and 1 tablespoon of the oil stirring to combine. Let set about 5 minutes until mixture is foamy.

2. Add 1 1/2 cups of the flour and the salt mixing with a spoon until the mixture is smooth.

3. Add 1/4 cup at a time of remaining flour to mixture working it into the dough until a ball of dough is formed that is still slightly sticky.

4. Knead 3 -5 minutes on a lightly floured surface or using the KitchenAid with the bread hook.

5. Use remaining oil and oil a large bowl.  Place dough in bowl and cover with plastic wrap.  Place in a warm draft free place.

6. Let rise until doubled in size.  About 1 1/2 hours.

7. Roll dough out on a slightly floured surface to fit 15 inch pizza pan.  Sprinkle pizza pan with cornmeal and place dough in the pan.

8. Top dough with favorite toppings.

9. Cook 15 -20 minutes or until done at 375 degrees.

Makes: 1 15 inch pizza, Preparation time: 10 Minutes, Cooking time: 15-20 minutes

Okay, this was amazing................  Came out PERFECT!  I used a bread hook on the mixer instead of doing it myself..lol...

Do yo know if you need to make adjustments to the recipe when making it at high altitude?  I live in Denver (5280 feet).  Thanks!

I loved this dough- it was very filling and eay to make... I used instant yeast (and too much) by mistake which made it REALLY fluffy- it rose up like deep dish- which was acutally delicious!

Oh, this was sooo yummy.  I used 2 cups whole wheat flour and 1 cup white flour, simply because I didn't have enough whole wheat.  It came out abosolutely perfect.  I topped it with spinach, onion, green bell pepper, scallions, tomato and BBQ tofu cubes.  MMMM.   Smitten

I live in qatar and can't find any yeast sold in packets. does anyone know how much a packet of yeast is equivalent to, in terms or tspoon, tbspoon, etc? Thanks! Cool
