Cinnamon Swirl Bread

Ingredients (use vegan versions):

    1/4 cup vegan margarine (I use Earth Balance)
    1 1/3 cups sugar, divided
    1 egg substitute (1 Tablespoons ground flax with 3 Tablespoons water works well)
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 cup soymilk, with approx 1 1/2- 2 1/2 teaspoons vinegar
    1 Tablespoons ground cinnamon

Directions:

Honestly, this is one of the best recipes I've ever tried. It's like those cinnamon bread/cake like things I made from a box in the pre-vegan days. I took this to a gathering of 100% non-vegans.  Everyone loved it, from the little kids, to the adults. You MUST try this recipe at least once. You won't be disappointed

Preheat oven to 350 degrees F.  In a large mixing bowl, beat together Earth Balance, 1 cup sugar, and flax egg.  Combine the flour, baking powder, baking soda, and salt.  Add the flour mixture to the flax egg mixture alternately with the curdled soymilk.  In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.  Pour a third of the batter into a greased 9X5 inch loaf pan.  Sprinkle a third of the cinnamon sugar on top of batter.  Repeat layers twice.  Bake for 45-50 minutes, until a toothpick inserted near the center comes out clean.  Cool in pan for 10 minutes.  Remove from pan to a wire rack to cool completely.

Variations:

For a healthier version: Use whole wheat pastry flour instead of all-purpose.  Reduce the sugar of the dough to 1/2 -2/3 cup. Use half Earth Balance and half apple sauce.

Preparation time: 10 min plus baking time

I made this bread and used 1/2 of a banana and less flax for my egg replacement. It was a bit bland tasting so I'm glad I added the banana to give it some flavor.

i made this a few hours ago. i think it's pretty good. i love cinnamon. i added 1 tsp of vanilla since the other reviewer said it was bland. applesauce for the egg replacer, and used pastry flour and wheat flour. i also divided up the cinnamon. 1 tsp went into the batter. the other 2 tsps for the cinnamon mix that went in between the layers. and i also put some cinnamon glaze over it right when i took it out of the oven.

oh and i added a few tbsp of raisins. it's yummy Smiley

i'll upload pics once i get on my other computer.

i didn't measure, i quickly just put some powdered sugar, cinnamon, vanilla and water into a tiny bowl and mixed, then drizzled it completely over the top.

This is really yummy and simple to make--I used whole wheat flour and less sugar and subed vanillia soy milk for regular--I also just threw it all together without that layer thing of cinnamon and sugar--what can I say, I'm kinda lazy--but this bread tastes awesome! I used it for strawberry shortcake, but this would also be a great breakfast bread with whole fruit jam!

This is a great recipe! I added golden raisins  and nutmeg to the top layer. The loaf didn't last ten minutes among four people. I will make this again very soon.

This is the BEST CINNAMON BREAD EVER!!!!!  Smitten I made a few changes since I did not have  all the ingredients. For the sugar that was mixed in the bread I used maple syrup instead cause I did not have any sugar so I also had to increase the flour by a cup , then I added vanilla, for the filling I used brown sugar instead and I made three layers instead of two  Grin Grin

i mixed some earth balance and some flour and some sugar and cinnamon together until there were crumb type things ...umm. amounts..

one tbsp margarine
1/4 c sugar
dash cinnamon
add flour and mix until it makes crumb-looking things (pea-sized!), then sprinkle on top and bake!

I made this twice in two weeks, it was so good!

The first time I used normal white flour and used 3/4 cup sugar in the dough and baked it as a bread.  It was super yummy, but a bit crubly for some reason so it was difficult to slice.  Super tasty though and the bits I did manage to slice looked so pretty with all the swirly layers!

The next time I made this I think I only used ~1/4c (or maybe 1/2c, I can't remember) sugar and I used wholewheat flour.  I also made it into little cupcakes - the recipe made 12 cupcakes perfectly.  These were great and I think they tasted just as good as using more sugar and white flour.

This recipe is so easy to make and tastes great.  I'll definitely make again.  Thank you!

 Smitten This recipe rocked.  I made this for the first time last night and between 4 people we almost finished the loaf.

I did substitute apple sauce for the egg replacer and added a teaspoon of vanilla.  Also added a teaspoon of the cinnamon into the batter mix.

I made a wonderful icing to go on the cake as well ... a little soy milk, vegan buttery spread, powdered sugar, vanilla and cinnamon brought to a boil and then poured over the loaf hot.  When the mixture cools it's my great grandmother's cake icing.  =)
