Pineapple Lentils

Ingredients (use vegan versions):

    3 tablespoons oil
    1 onion, chopped
    1 teaspoon salt
    1 teaspoon pepper, ground
    3 garlic cloves, minced
    2 cups dry lentils
    3 cups water
    4 oz crushed pineapple

Directions:

Pick over lentils and soak in water for at least 30 minutes.

Heat oil and saute onion, salt and pepper until the onion has browned.

Drain lentils and add to the skillet with garlic. Cook for 2 minutes.

Pour over water, cover and simmer for 30-45 minutes until the lentils are done.

Stir in pineapple and serve.

Serves: 4

Preparation time: 1 hour

After seeing this gorgeous photo, and realizing that I had all the ingredients on hand, I decided I had to make this.  Right Now.  I added some peeled and grated fresh ginger in with the garlic.  Yum!  This one's going in my recipe box.  Thanks!

I agree, this is not crazy! Beans & fruit go together well (ie pineapple & kidney beans or baked brown beans)... I guess because they are "the musical fruit...Huh!!! Grin

This is really, really good! The only things I added were the fresh ginger, as suggested, and a diced green pepper. Even my 7yr old asked me to make it again.  Thumbs Up

lentils and pineapple, coconut and black beans, chocolate and chili peppers...all very very good together.  maybe its just me but i grew up eating tradtional dutch and german foods so lots of sweet and savory flavors together.  im going to try this one.  sounds like a winner to me!

I made these - only used one tablespoon of oil and that was more than enough.  Wink I loooove tropical fruit in savory recipes. The balance of flavours in this was really nice, though in future I might add a little ginger, as Saynever did, to bring out the pineapple.

 I halved the lentils and cooked them ahead to add to the onion mix (1/2 onion, garlic) near the end of cooking. 

I used about 1T olive oil, added a bit more garlic and used about 1/4 tsp grated frozen gingerroot, which I can barely taste-I should have used more but was afraid of it being too gingery.  I just added some crushed red pepper to make up for the lack of gingery spice.  I also only had pineapple juice, so I used a 6oz can after draining the mostly cooked lentils, and the pineapple flavor is faint but noticeable.

This was a great idea!  I was looking for something fun to do to use up my last 1 C of lentils, and that pineapple juice has been banging around forever with no purpose Smiley

Next time, I'd use the juice and some crushed pineapple, about 1/2 tsp ginger or powdered ginger, and maybe even use black beans instead of lentils-maybe with some cumin?  Overall it's a great idea!!! Thumbs Up
