Pineapple Lentils

What you need: 

3 tablespoons oil
1 onion, chopped
1 teaspoon salt
1 teaspoon pepper, ground
3 garlic cloves, minced
2 cups dry lentils
3 cups water
4 oz crushed pineapple

What you do: 

Pick over lentils and soak in water for at least 30 minutes.
Heat oil and saute onion, salt and pepper until the onion has browned.
Drain lentils and add to the skillet with garlic. Cook for 2 minutes.
Pour over water, cover and simmer for 30-45 minutes until the lentils are done.
Stir in pineapple and serve.

SO HOW'D IT GO?

Fabulous!!!  I added th 8 oz of pineapple and the ginger as was recommended.  Added lots of ginger.  Could not taste the ginger;but it added heat so I know it was there.  Served it over brown rice.  Luv it!!!  I will be making it again and again and again!!!  Thanks Leda!!

Made this without adjustment and enjoyed it. In the future I'll chop up some fresh pineapple to make it more flavorful and throw in some ginger.

This was great.  I used 8 oz crushed pineapple instead of 4 and ginger and it totally worked out.  Next time I would add pineapple chunks as well. Served it with brown rice and soy sauce.

I halved the lentils and cooked them ahead to add to the onion mix (1/2 onion, garlic) near the end of cooking. 

I used about 1T olive oil, added a bit more garlic and used about 1/4 tsp grated frozen gingerroot, which I can barely taste-I should have used more but was afraid of it being too gingery.  I just added some crushed red pepper to make up for the lack of gingery spice.  I also only had pineapple juice, so I used a 6oz can after draining the mostly cooked lentils, and the pineapple flavor is faint but noticeable.

This was a great idea!  I was looking for something fun to do to use up my last 1 C of lentils, and that pineapple juice has been banging around forever with no purpose :)

Next time, I'd use the juice and some crushed pineapple, about 1/2 tsp ginger or powdered ginger, and maybe even use black beans instead of lentils-maybe with some cumin?  Overall it's a great idea!!! ;)b

I made these - only used one tablespoon of oil and that was more than enough.  ;) I loooove tropical fruit in savory recipes. The balance of flavours in this was really nice, though in future I might add a little ginger, as Saynever did, to bring out the pineapple.

lentils and pineapple, coconut and black beans, chocolate and chili peppers...all very very good together.  maybe its just me but i grew up eating tradtional dutch and german foods so lots of sweet and savory flavors together.  im going to try this one.  sounds like a winner to me!

This is really, really good! The only things I added were the fresh ginger, as suggested, and a diced green pepper. Even my 7yr old asked me to make it again.  ;)b
