Yummy Peanut Sauce - Rice Noodle Dish

What you need:

2 tablespoons of peanut butter
2 tablespoons of soy sauce
1.5-2 tablespoons of brown rice syrup
3oz of rice noodles
handful of peanuts

What you do:

Combine the first three ingredients in a bowl and stir with a fork until a consistant paste is formed. Boil the rice noodles for 3 minutes. Remove the rice noodles from the boiling water and place in the bowl over the peanut butter paste. Add as many peanuts as you like. Mix it all up and eat it. Its yummy!

I substituted maple syrup because it's what I had on hand.  I added about 1 tsp of sriracha hot sauce because I thought it was a little bland.  If I were to make the recipe again I'd add more hot sauce, maybe 1 tbsp--I think it would be better with some kick.  It would also be pretty easy to add some chopped green onions.

This was cheap, filling, and EASY, but nothin' special taste-wise.  I'd make it again!

Well, I had planned on following this recipe almost exactly, but I quickly found out that I was out of a few ingredients.  Namely, everything except the peanut butter.  I only had one tbsp of soy that was all I used.  I also added a little bit of diced onion, and I used maple syrup instead of brown rice syrup.  And I used chunky peanut butter instead of adding peanuts at the end.  So, even with all of the modifications, it was still sooo good, and really quick and easy, aso I will definitely abe making it again

this was pretty tasty...i made a couple of tiny changes though: only one tsp of soy sauce and i used maple syrup instead of brown rice syrup.  i spread it over chilled soba noodles and added some broccoli too! yummy, quick and easy :D
