Yummy Mexican Pasta Bake

What you need: 

1 pound rotini pasta
1 (12 ounce) package vegan chorizo (I use soyrizo)
1 (15 ounce) can black beans
1 (14 ounce) can corn
1-2 tomatoes, chopped
1 (8 ounce) can tomato sauce
salt and pepper, to taste
garlic powder, to taste
chili powder, to taste
1 handful spinach
1 (10 ounce) block cheddar vegan cheese (I like Follow Your Heart), divided

What you do: 

1. Preheat oven to 450 degrees F. Cook pasta according to package directions, set aside. Cook vegan chorizo in a large pan (I used a wok) until heated and beginning to brown.
2. Add in corn and black beans and chopped tomatoes. Add pasta to the pan. Now, add tomato sauce and seasonings. Stir all together. Pour 1/2 of the mixture into a casserole dish.
3. Put a layer of spinach on top of this, and 1/2 of the vegan cheese on top of the spinach. Add the rest of the pasta and the rest of the cheese on top.
4. Bake for about 10-15 minutes or until cheese is melted. Turning on the broiler at the end helps melt the cheese better.

SO HOW'D IT GO?

This was super tasty! We omitted the soyrizo, just out of preference and it was still delicious. It's a nice and simple weekday dish that is not only filling but hearty. Will definitely be making this again. Thank you for sharing! Smile

This recipe looked so yummy just from reading it and guess what: it IS!  Very delish.  I liked it straight from the pan and after baking. We used real cheese though because we are just vegetarian and it melted really fast so I only "baked" it for like 4 minutes or so.

This was great! I made a few slight changes (sorry, I hate people who review recipes and then make a bunch of changes, now I'm doing it myself!):

- I have no source of cheap soyrizo in the hicks here in Canada, so I made my own: http://tastespace.wordpress.com/2010/11/14/vegan-chorizo-sausages/ (about half this recipe was used)

- I added some mushrooms I needed to get rid of

- I used taco seasoning I had kicking around instead of chili powder

I'm definitely adding this to my "regulars"!

I set aside a little of this for eating while the casserole baked. I LOVED this dish straight out of the pan, but found it a little less appealing after baking. So I'd put this at 5 stars non-casserole, 4 stars casserole. I'd wager my boyfriend would put this at or close to 5 stars even in casserole form, based on the fact he came back for more and ended up eating a quarter of it! Thanks for the fabulous recipe ;)b

My husband said this was the best thing I ever made, and that it tasted like hamburger helper. He asked me to make it again, yesterday. I wouldn't go as far as to say it was the best thing ever, but it was yummy, easy, pretty quick, everyone ate it up. I left out the spinach, added bell pepper and onion, and kidney beans instead of black. I'll be making it again, probably lots of times. 5 stars!

I made this for dinner last week, and I must say that it was delicious!  I'm not a big fan of soy cheese, so I made a nutritional yeast sauce and mixed it in with the pasta (I should've doubled the sauce though).  Our grocery store USED to carry soyrizo...they no longer do, so I just used some Boca 'beef' crumbles instead.  We will definitely be making this again!  Maybe we will add some salsa to it next time...

This is a good one. No need to be precise! Would you believe in San Francisco, we couldn't get our hands on a hunk of soy cheese!? My neighborhood was disappointing tonight. So we threw some cashews, nutritional yeast, tahini, lemon juice, and a dab of dijon in the mixer and made our own cheese! It came out great. We decided that corn wouldn't work for us, so black olives would do the trick, but then we forgot the black olives (our fault, not the stores in the neighborhood!), so we went onward and followed the recipe for a total Mexican delight! Hooooray for easy recipes that taste good. P.S. I spilled a pound of pasta on the floor, but i'm not going to mention that. Just make this recipe because it's gooooood!

This really was a great recipe, I should have added more seasonings though., But I also ate this with sour cream and it was EXCELLENT. i would definitely make this again, it was pretty easy to make too.

This was my first time using soyrizo and it was quite yummy.  I didn't have any spinach so I just left it out, I used Mexican spicy tomato sauce, and fresh crushed garlic instead of powder.
