Yummy Avocado, Tomato, Sausage and Tofu Scramble

What you need: 

1-2 Tablespoons olive oil
1/4 package ground sausage-style protein (I used Gimme Lean that comes in the plastic tube)
1/2 block extra firm silken tofu, chopped
salt and pepper to taste
1 Roma tomato, chopped up however big or small you want
1 avocado, sort of chopped up
2 Tablespoons vegan cream cheese

What you do: 

Heat olive oil over medium or medium-high heat.
Add ground sausage style protein, use a spatula to break it up as best as possible.
While the "sausage" starts to cook and brown, cut up tofu. The smaller you cut it, the less work it will be for you while you're cooking, other wise once you add tofu, use side of spatula to break it down more.
Add tofu and lower heat to medium. Add some salt and pepper and mix it well. Keep checking on it and stirring while you cut up your tomato.
Add tomato and let that cook while cutting up your avocado. I left my avocado into some pretty good size chunks so the heat wouldn’t make it too mushy.
Let it all mix and cook together for a couple minutes. Once it's all heated through, add cream cheese and mix until it had melted in to the scramble. You don’t want to see any big hunks of cream cheese left.
Then you're done! I added a little more salt and ate the whole darn thing in one sitting as a late breakfast/lunch.
It would easily serve more if you served it with toast or fruit. I think this mix would also be awesome in a pita for a breakfast sandwich.

This looks delicious. All of my favorite things all in one dish - especially avocado. I'm making this with hash browns tonight!
