Wild Rice and Yam Soup

What you need: 

2 tablespoons oil
1 medium onion, finely chopped
4 large cloves garlic, minced
1/2 cup fresh mushrooms, chopped
1 cup wild rice
1 cup cooked pureed yams (sweet potatoes or pumpkin would work too)
32 oz. un-chicken broth
32 oz. vegetable broth
1 teaspoon cajun seasoning
sea salt and back pepper to taste

What you do: 

Heat oil in a large pot. Add onions, garlic and mushrooms. Toss to coat with oil and cook about two minutes. Add the rest of the ingredients and simmer about an hour, or until the rice is done. season to your liking. This makes a wonderful hearty winter soup. I hope you enjoy.

SO HOW'D IT GO?

This soup is amazing. I even got a positive review from my oh-so-reluctant-vegan husband.
I love the seasonings - it isn't like a typical potato soup that gets a little boring.
