White Asparamole
1 bunch white asparagus (about 1 pound)
3 cloves garlic
1/4 cup cilantro, chopped
1/2 lime, juiced
1/4 cup chopped red pepper
1/2 green pepper, chopped
4 roma tomatoes
1) Chop asparagus and then blend in a blender or food processor to desired consistency.
2) Combine remaining vegitables except the tomatoes and mix in blended asparagus. Add lime juice and stir to combine.
3) Process the other two tomatoes until chunky. Combine with mixed vegetables and serve.
This is incredibly easy to modify--add in anything else you like, fresh corn, spices, other peppers, etc.
Tastes great on avocado flax tostadas, topped onto a salad, as a filler for raw tacos, etc. Versatile and yummy!!!

I finally made this and it is really quite tasty! I couldn't find any white asparagus so I had to use green, but I'm guessing it doesn't make that big of a difference taste-wise. I also tossed in a Tabasco pepper for a little added heat. ;)b
