The What-to-do-with-Celery Salad

What you need: 

1 to 2 bunches celery (about 6 to 10 stalks - really, however much you have and need to get rid of)
4 ounces super firm tofu
1 crisp apple, cut in bite-size pieces (I used Fuji)
1 ripe pear, cut in bite-size pieces
4 green onions
1/2 cup walnuts
1/3 cup raisins [u]Dressing[/u]:
1-1/2 tablespoons curry
1-1/2 teaspoons vegan mayonnaise (I use Veganaise)
1-1/2 teaspoons salt, or to taste
1 teaspoon cumin
1 teaspoon garlic powder
juice of 1/2 lemon

What you do: 

1. Salad: In a large bowl, combine all salad ingredient (celery, tofu, apple, pear, green onions, walnuts, and raisins).
2. Dressing: In a separate bowl, whisk together all dressing ingredients (curry, mayonnaise, salt, cumin, garlic powder, lemon juice).
3. Add dressing to salad and toss together until salad is well coated. Enjoy immediately.
