Wakame Seaweed Salad

What you need: 

5 strips Wakame seaweed
1 cucumber, chopped
2 oranges, chopped, or a can of mandarins, drained
5 red radishes, cut in half and sliced
1 green onion, diced
1/4 cup mirin (or, 1/4 cup white wine with 1 tablespoon sugar)
2 tablespoons rice vinegar
1 teaspoon salt
sesame seeds

What you do: 

Shred Wakame with kitchen shears (scissors) and soak in boiling water for 5 minutes. Drain.
Toss Wakame with other veggies and fruit.
Mix dressing with mirin (or wine and sugar), rice vinegar, salt, and sesame seeds.
Toss dressing with veggie and fruit mixture. Serve immediately.
