Very Easy and Addictive Eggplant "Chips"
What you need:
1-2 tablespoons olive oil or 1 teaspoon olive oil plus broth
1-2 tablespoons tamari
1/2 teaspoon granulated garlic
1 eggplant (I use organic), sliced 1/4" thick rounds
What you do:
1. Preheat oven to 400 degrees Fahrenheit. Pour the olive oil (or oil plus broth) on the cookie sheet, along with the tamari and garlic. Swoosh the cookie sheet around to mix.
2. Place eggplant slices on cookie sheet. Turn each slice over to coat both sides.
3. Bake for about 10 minutes on each side. (Turn over when browned on the bottom). They are done when they look caramelized on each side.
I pretty much eat this all to myself, along with a salad and maybe some bread or something. I am not sure why I love them so much, but I hope you will too!!

Omg, this was DELICIOUS! :) Thank you! My only problem is I accidentally cut some of my slices a bit too thin. When I make this next time, I'll definately keep them about 1/4 inch.
I made these today and played around with a few different ideas. One of my faves I used evoo, tamari and dehydrated onion flakes. My oven was already full when I was making these so I pan fried them and they turned out delish!! I also did some up by dredging the slices in soy moo and then dipping and pressing each side into a mixture of panko bread crumbs and my mock KFC spices. These ones I cooked in the oven on a heavily greased cookie sheet. They turned out absolutely fantabulous. This was the first time I've ever cooked eggplant and it won't be the last. :)

I made these tonight using asian eggplants from our garden. Delicious!
This is an amazing recipe!!! Especially since I was starting to go into panic mode about how the huge eggplant I bought last week had yet to be cooked.
I added some dried dill in a surprise move and they turned out great! My only problem was that some of the slices were glued to the baking sheet... but maybe they were too thin and there wasn't enough oil... I'm not sure, but the taste was fab! :>
I liked these a lot (I ate the whole eggplant tbh), BUT, I hate greasy veggies. I only sprayed them with cookie spray, but next time I don't think I'll even do that. Otherwise, I loved it. I'd definitely eat it for breakfast, lunch and dinner 0.o
I really liked this recipe and I mixed it with some random veggies I had cut. My nephew (who is an excellent little food critic) said, "wow, I've never liked eggplant and now I do!"
So whenever a I make a dish that needs a little extra flavor on the side, I'll definitely throw these in when I can.
