Veggie Saute

What you need: 

2 red onions, chopped
3 cloves garlic, minced
olive oil, as needed
2 eggplants, chopped
4 zucchini, chopped
1 stalk broccoli rabe, chopped
3 large beefsteak or plum tomatoes, chopped
salt and pepper, to taste
basil, to taste
lemon pepper, to taste

What you do: 

1. Place onions and garlic in a skillet covering the bottom with olive oil.
2. When onion is lightly browned, start adding other vegetables slowly.
3. Add desired seasonings. Saute for 1/2 hour.
This can be served over pasta, or makes for a delicious appetizer over melba garlic round vegan breads.
