THE Veggie Paella
3 tablespoon Olive Oil
1 yellow onion chopped
1/2 of a red bell pepper + 1/2 of a green pepper chopped
1 stalk celery
handful of mushrooms chopped
1 roma tomato chopped
1 1/2 cup medium grain white rice
1 cup dry white wine + 1 teaspoon ANNATTO (this is the secret!!!) (may sub. turmeric)
2 cups water + 2 teaspoon liquid smoke + 2 veg bouillon cubes
2 large garlic cloves crushed
salt and Mrs. Dash to taste
1 teaspoon lemon juice
1/4 cup peas
1 small zucchini
aprox. 18 snow peas
Okay guys this here is the bomb!! Saffron just won't happen in my college student budget, so a teaspoon of ground annatto does the trick! It is available at my local Hispanic market.
Saute onion, peppers, celery and mushrooms in the oil till slightly tender. Add rice and stir. cook for a minute or so. Add vegan white wine and annato cook 30 seconds Add tomato, water, liquid smoke, boullion, garlic, lemon juice salt and Mrs. Dash(I love that stuff) to taste bring to a simmer and add peas, zucchini, and snowpeas. Cover tightly and cook over very low heat about 20 min or till rice is done.
