Triple Fruit Couscous Betty

What you need: 

4 apples washed, cut up into pieces, skin on
1 cup blueberries (I used frozen)
1/2 cup thompson jumbo raisins
1/2 cup chopped apricots (dried or fresh)
1 cup couscous (not cooked) but could be if you have left overs
1/2 cup almonds (I used whole but use slivered or chopped)
1 cup apple juice
1/4 cup lemon juice
dash cinnamon
cut up ginger (candied or root)
1/2 cup oatmeal, large flake

What you do: 

Chop up all fruit and mix together. Add fruit juice, cinnamon, ginger, lemon juice, almonds and couscous. Make sure well blended. Place into 9x9 pan, not greased sprinkle oatmeal on top. Bake at 350F for 35-45 min. Stir. If couscous needs moisture, add a little more apple juice if you feel it looks a little dry. This is great warm or cold. Enjoy
