Totally Tubular Vegan 7 Layer Bean Dip

What you need: 

3 avocados
2 tablespoons fresh squeezed lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon salt
1 teaspoon garlic or onion powder
2 teaspoons paprika
1/2 cup vegan mayonnaise (I use Vegenaise)
1 cup vegan sour cream
2 (15 ounce) cans refried beans
1 (10 ounce) package vegan burgers (I use Boca Grillers), cooked or 1 cup Spanish rice
2 tomatoes, chopped or 1 cup salsa
1 bunch green onions, chopped
1 (4 ounce) can chopped or sliced black olives
1 (8 ounce) package vegan cheese (I use Daiya Cheese), optional

What you do: 

1. Mix avocados, fresh squeezed lemon juice, salt, and pepper. Mix chili powder, cumin, salt, garlic powder, and paprika for taco seasoning mix. Mix vegan mayo, vegan sour cream, and 1/2 taco seasoning mix.
2. In a 9x13" pan, layer ingredients as follows. Bottom layer: refried beans, then vegan burgers with other 1/2 taco seasoning, or Spanish Rice (I have made this with the vegan burgers and without. It comes out a little runny without the burgers,but is still fantastic. The Spanish rice alternative will soak up the excess moisture if used.)
3. Second layer: avocado mixture, third layer is vegan sour cream mixture, and fourth is tomatoes or salsa. Fifth layer: onions, sixth is black olives, and seventh is vegan cheese.
4. Top with whatever is left over. Cover and Chill for at least 2 hours, preferably overnight; the flavors combine better!
