Tomato Sauce from Scratch
4 lbs tomatoes
1 large yellow or red onion
1 garlic bulb
12 oz tofu (up to 2lbs if you like)
2 bay leafs
1 tablespoon parsley
1 tablespoon cilantro
1 tablespoon basil
1 tablespoon oregano
any other spices you like: salt, pepper, sun dried tomatoes, etc
1 cup nutritional yeast (optional)
tomato paste (optional)
1. Peel and dice the onion, then simmer in olive oil in large kettle until they begin to sweat.2. Wash and dice tomatoes. Then place in large kettle on med-high heat.3. Mince the garlic and add to kettle.4. Blend in food processor or blender the tofu until smooth. You can add a shot of water to promote smooth consistency. 5. Fold the tofu mixture into the tomatoes in the kettle.6. Add all spices. Add nutritional yeast, if desired. This will give the sauce a 'cheesy' flavor. 7. Bring to light boil and reduce heat to a simmer.8. Simmer until reduced to a thick sauce. 9. Optional: use canned tomato paste as a thickener. If done so, it adds lots of sodium to the dish and quickens cooking time considerably.
Source of recipe: I wrote this recipe. I love tofu, don't get me wrong. Sometimes those eating meals I prepare are a bit overwhelmed by all the colors, textures and flavors, especially if they are not used to a healthy, balanced diet. This recipe is not only tasty but a new way to enjoy tofu in your pasta sauce.
