Tomato Sauce Rice
1 cup instant white rice
1/2 cup canned kidney beans
1/2 cup canned corn
1 teaspoon Cajun powder
salt
1/2 cup tomato sauce (I use Prego Original)
other veggies you think would sounds good in this...
1 cup water
Boil 1 cup of water (add salt if wanted). Add 1 cup of rice, cover, remove from heat.
Pour corn into microwaveable bowl, heat for approximately. 1 minute, stir, heat for approximately 30 seconds more. Do the same for the kidney beans. Mix 1/2 cup of beans and corn together in bowl. (The rest of the corn and kidney beans can be put in the refrigerator to be eaten later. Once all water has absorbed from rice, add beans and corn. Add teaspoon of cajun powder and mix well. Salt to taste.
Warm tomato sauce in microwave for approximately 1 minute or until hot. Mix with the rest of the ingredients well. Enjoy.
All ingredients are approximate measurements as I just added as I went on. Add more or less to suit your taste. This served 1-2 people. Add more ingredients for more people.
SO HOW'D IT GO?
Ok... so I know this sounds a little bizarre, but I make this recipe all the time with refried beans! I had almost nothing in the cabinet one day and found tomato sauce, vegetarian refried beans, brown rice, and corn... microwave rice, microwave corn and beans, put them all together, and voila!! It's amazing :) Awesome for poor college kids! I'm going to have to try this version with kidney beans... maybe even a mix of the two? Oh, and it's really good wrapped up in a whole wheat vegan tortilla as well!
