Tomato Pasta Soup

What you need: 

1 14 1/2 ounce can of tomatos (diced, crushed, whatever you have on hand)
2 cloves of chopped garlic
1 teaspoon olive oil
2 tablespoons tomato paste
4 cups of water
1 veggie bullion cube
5 1/2 ounces (about 3/4 cup) uncooked pasta (elbow macaroni, broken up spaghetti)
1/2 teaspoon oregeno
1/2 teaspoon basil

What you do: 

Heat up olive oil and add garlic. Let garlic cook for a minute and then add tomatoes, tomato paste, oregeno, and basil. Bring to a boil and then add the 4 cups of water and the bullion cube. Bring to a boil again. Once it boils add the pasta and cook until pasta is tender.
This is good served with croutons or crusty vegan bread. I just drop some croutons onto the top of each bowl of soup.
Also if you don't have the bullion cube it works just fine without it! It just adds a little extra flavor.
For the pasta I like using elbow macaroni, but broken up spaghetti, or any other leftover pasta works fine.

I made this soup because it's super easy, I'm sick and really only want soup, and I had a bunch of tomatoes I needed to use up.  I thought it was super tasty, my fiance isn't a huge fan of tomato soup, but he thought it was good if not super exciting.  I made one little change, I mixed some flour with milk (I'm just a veggie, not a vegan) and added it at the end to thicken it up a bit.  Very tasty and perfect for my sore throat!


Made this soup again & made the same mistake again...all my tomato cans are 28 oz, so I have a ton of soup  ;) Not complaining though, we really like it.

This is a good, basic recipe for very tomatoey soup. I modified it with what I had on had: Muir Glen crushed tomatoes and tomato juice. I was afraid I would be eating watered down sauce. Fortunately, it actually tasted like soup.


I should have checked the cans of tomatoes before I opened & dumped 2-28oz cans into the pot ??? I wanted to double this recipe....not to quadruple it :-[  So a quick change to the really big stock pot & in went lots more veggie broth. Now I've got enough to feed an army. This should freeze ok, shouldn't it?
