Tofu-Veggie-Avocado Sandwich

What you need: 

2 slices wheat bread
2 thin slices of raw tofu, squeezed dry
1/2 avocado
2-4 mushrooms, sliced
2 slices of tomato
4 slices vegan pepperoni
cucumber
lime
sliced olives (optional)
salt
pepper

What you do: 

Preheat oven to 400 degrees.
Put the tofu and pepperoni slices in the oven for a few minutes to warm them while you chop the veggies up.
Toast bread.
Mash avocado. Add lime, salt and pepper to taste.
Spread avocado on the toast, if you put olives on the sandwich, place them on top of avocado as it will help hold them.
Layer the rest of the ingredients howe'ver you like.
Enjoy.
