Tofu Surprise

What you need: 

16 oz. package firm tofu
1/2 cup vegetable broth
1 tablespoon olive oil
1-2 tablespoons soy sauce
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
3 cups assorted chopped vegetables (I like to use seasonal squash, broccoli and carrots)
1/2 cup diced white or yellow onion (about 1/2 a small onion)
2-3 cloves of garlic minced

What you do: 

In a large skillet, over medium heat, saute the onion and garlic in the olive oil and vegetable broth until the onion is transparent-like.
Add all vegetables and cook until tender (about 5 minutes). Add the tofu by crumbling it into the skillet with the vegetables.
Add the soy sauce, dried thyme and dried basil. Continue stirring the scramble until the tofu is heated through and all the ingredients are mixed.
This dish makes a yummy, healthy and complete breakfast served with an English muffin or a slice of sourdough toast.
