Tofu & Fried Rice

What you need: 

vegetable oil cooking spray
1/2 cup chopped onion
1 cup firm tofu, cut into small cubes
1 cup frozen peas
1 teaspoon garlic powder
4 cups cold cooked rice (like left over from that chinese pig out)
3 tablespoon soy sauce
1 green onion and top, sliced

What you do: 

Spray large skillet with cooking spray and heat over medium-high heat. Add onion; stir-fry 1 minutes. Stir in tofu, peas, garlic, rice and soy sauce; cook until heat through, gently separating rice grains. Turn out onto serving platter and sprinkled with green onion.
