Throw It Together Mexican Casserole
1 cup rice
2 cups water
1 (12 ounce) package vegan crumbles or 2-3 cups beans
4 egg replacers (http://vegweb.com/index.php?topic=7678.0)
2 (1 1/4 ounce) packets vegan taco seasoning
1 cup salsa
1 cup shredded vegan cheese, divided
1. Preheat oven to 350 Fahrenheit F and grease a casserole dish. Cook rice with water, according to package directions.
2. While rice is cooking, combine remaining ingredients, using 1/2 the cheese, and mix thoroughly. Stir in cooked rice.
3. Pour mixture into prepared casserole dish and cover with remaining cheese. Bake covered for 45 minutes.
4. Remove cover and bake for an additional 15 minutes. Let sit for 5 minutes before serving.

SO HOW'D IT GO?
This casserole was delicious. I liked it with the rice, because it didn't require any additional tortillas or shells, keeping it a low carb dish. I also added guacamole and a little Tofutti sour cream to my serving. This was a big hit with my whole family.
Update: I've made this several times now. Most recently, I took it to a get-together at my in-laws, none of whom are vegan. It disappeared! I got several compliments and my sister-in-law requested the recipe.
