Thanksgiving Sandwich

What you need: 

2-4 vegan turkey slices (Tofurky or Yves)
2 tablespoons cranberry canned sauce
1/4 cup green beans (fresh, frozen or canned)
1 tablespoon vegan cream cheese (Tofutti) or soy mayo
salt and pepper to taste
2 slices white bread

What you do: 

Spread mayo or cream cheese on both slices of bread. Then add the cranberry sauce. Layer vegan turkey slices and green beans. Sprinkle with salt and pepper. Microwave for 30-45 seconds if you like your sandwich warm.

SO HOW'D IT GO?

This was a delicious way to use up Thanksgiving leftovers but I'd happily eat it any day of the year.  Thanks!
