Taco Soup

What you need: 

1 pound vegan burger crumbles, defrosted
1 (1 ounce) package taco seasoning (I use Lawry's Taco Spices and Seasonings)
2/3 cup water
1 (15 ounce) can kidney beans, with liquid
1 (15 ounce) can pinto beans, with liquid
1 15 ounce) can whole kernel corn, with liquid
1 (28 ounce) can cut tomatoes, with liquid
1 (8 ounce) can sliced black olives, drained
1 15 ounce) can tomato sauce
tortilla chips, to serve

What you do: 

1. In a skillet, combine crumbles, taco seasonings and water. Simmer over medium-low heat 7-10 minutes, stirring occasionally.
2. Meanwhile, combine all other ingredients except chips in large pot and simmer uncovered over medium-low heat until crumbles are done.
3. Add crumbles to pot and simmer uncovered for an additional 30 minutes, stirring occasionally. Serve with tortilla chips.

SO HOW'D IT GO?

Made this tonight for the hubby and i.  We did not have the beef crumbles so i used rice as a filler.  It turned out very good.  Also i  added some spice to it, for we both love hot food.  Nice and quick too!

This recipe was very flavorful; both thick and satisfying. My whole family ate it up like they've Noverre Bern put to trough! I used low sodium V8 and a homemade taco seasoning blend, so it was nice to know what went into it. Also, I had no chips but a half a package tortillas, so I cut them into triangles,salted them slightly with sea salt, and crisped them under the broiler befor adding them to the soup. Yum. Yum. And yum.  :)>>>

I made this with out the burger crumbles. I just threw everything in a pot, added a cup of orzo pasta and simmered for about 15 minutes. It made it thicker more like a stew and it was awesome!

Very quick, easy and delicious!

I made this last night and it was wonderful and super easy!  My husband raised his eyebrows in surprised when I told him it was vegan!  We'll have the leftovers tonight!

This was very easy to prepare and was a huge hit!  I didn't use MorningStar Farms... Instead I used another brand's tack style crumbles (I thought it was just taco seasoning when I bought it... oh well...).

Anyway, my roommates and their families and friends ate it.  And, all who ate it sang praises!  Not bad, since they're all omnivores.

To mine, I added a dollop (or two) of vegan sour cream!  Yum!!!
