Taco Casserole
1/2 package of Boca Burger meat substitute
1 package taco seasoning (check ingredients)
water
1 15-oz can corn
1 small can tomato sauce
totilla chips
1 15-oz can of beans (refried or black)
1/2 onion diced
non-stick cooking spray
2 cups grated soy cheese
Spray pan with non stick spray. Warm the meat substitute a few minutes. Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package. Cook for a few minutes, add tomato sauce and corn. Cook a few more minutes.
Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small). Pour mixture over chips, then cheese, then more chips, mixture, cheese. The mixture should be the last layer on the casserole. Then put a layer of beans and more cheese.
Bake at 350 degrees for 15-20 minutes until hot. Very yummy!
SO HOW'D IT GO?
I was going to measure everything by cup and write it here so it'd be easier to prepare if, say, you didn't have a full package of crumbles or you have a large bag of frozen corn - but I forgot to do that.
In my mind, both the chips and cheese in this recipe are junk food, so I decided to only use one and chose the cheese. I grated a 10-ounce package of Follow Your Heart Vegan Gourmet, Nacho flavor. It was enough to sprinkle cheese on three layers (two mixture layers and one bean layer). For sauce instead of grated cheese, I think Dragonfly's Bulk, Dry Uncheese Mix would work.
;)b Good stuff.. made it last night and insed of using the taco sesoning i just used a layor of salsa and i added some blck ovlies to each layer.. great use of old chips at the bottom of the bag that no one seems to eat.. LOL.. good stuff will use this one a lot.. got my kids to eat their veggies without me fussing for them to.. Thank you so much.. loved it..
This was a pretty good recipe- my boyfriend loved it. I am not the biggest fan of soy cheese but I did enjoy it on this dish, and I could even make it without the cheese and it still has great flavor. Fairly quick and simple. :)
;)b I have made this simple caserole several times. The family loves it. I used lightlife taco crumbles and topped it with tofutti sour cream , avo slices, and some hot sause. So Yummy.
This is a great dish when your short on time, and the flavor was great! I have a hard time of getting a hold of soy cheese, although it looks nice I don't think that it is needed with all of the other great flavors. Thanks a lot!
this was great: quick, simple, made with ingredients I already had in my house.
About the salt: I'm pretty sensitive to sodium. so i used a can of unsalted black beans, frozen corn, and mixed my own taco seasoning together (using a recipe on this site somewhere), so it wasn't too salty. I also used dried tvp instead of boca or morningstar farms stuff.
i used tortillas instead of chips and didn't use taco seasoning, just a lot of cumin and cayenne and it turned out excellent. i have also tried with both black bean and a layer of refried beans and this too was really good. this is a really quick, cheap, easy dinner that is very tasty.
foregoing the taco seasoning would really help with the dish being too salty. i just sprinkle the cayenne and cumin while i'm cooking the soy and then again on top of the casserole before putting the cheese on.
This is pretty good but can turn out too salty if you don't watch the sodium content. I used salt free chips and low sodium tomato sauce as taco seasoning is usually pretty high in sodium.
It was Fab-u-lous=).....I used smart ground for meat- sub & I don't like cheese. of any sort. Used mexicorn. added 2 garlic cloves~ Turned out better than I expected.
The recipe sounds yummy and I am going to give it a try.
On the Gardenburger subject- their barbeque riblets are really good and vegan.
