Tabbouleh
1/4 cup fresh mint, minced
3 tablespoon olive oil
1/3 cup lemon juice
1 teaspoon salt
1/2 teaspoon pepper
1 cup fine bulger (cracked wheat)
1 lb. tomatoes, peeled, seeded, and finely chopped
2 cup green onions, minced
3 cup parsley, minced
Wash the wheat, cover with hot water and let stand 30 minutes. Drain, then squeeze dry. Prepare the tomatoes, green onions, parsley, and mint as directed. Minced means very finely chopped. Remove stems from parsley and mint before chopping. Beat in the oil, lemon juice, salt, and pepper. Mix in the wheat until well blended. Serve on bed of clean romaine leaves, which may be used as eating utensils.
Hint: Chop and chop the parsley and mint. It really helps to use a food processor, but it can be done by hand as well. Also, to easily remove skins from tomatoes, place in boiling water for a couple of minutes then immediately place over cold running water. The skins will peel right off!
