Szechuan Snow Peas with Shiitake Mushrooms
1 tablespoon sesame oil
2 cups snow peas
1/2 cup shiitake mushrooms, sliced
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1/2 cup vegetable broth
2 teaspoons cornstarch
2 tablespoons Chinese cooking wine
1-1/2 tablespoons soy sauce
1 tablespoon chili garlic sauce
1 teaspoon sugar
1/8 teaspoon five spice
1/8 teaspoon red pepper flakes
salt, to taste
pepper, to taste
1. To a large frying pan or wok over medium heat, add sesame oil; heat until hot. Add the snow peas, mushrooms, garlic, and ginger; cook for a few minutes until warm.
2. In a bowl, combine the vegetable broth and cornstarch until no clumps remain. Add to the pan; let the broth reduce for another few minutes.
3. Add the cooking wine, soy sauce, chili garlic sauce, sugar, five spice, red pepper flakes, salt, and pepper; cook until the sauce is thick.
