Sweet Potato Hurry-Curry

What you need: 

1 small onion, diced
1 large yam, peeled and cut in medium chunks
1 tablespoon soy (shoyu) sauce
1/2 lb frozen peas, thawed
1 can (about 12 oz) coconut milk, or 1 1/2 cups soymilk
1-2 teaspoon (or to taste) curry powder
1/2 cup minced cilantro to garnish

What you do: 

Heat a little water in a nonstick skillet and water-saute the onion for about 2 minutes.
Add the yam chunks and soy sauce and cook a few more minutes, until liquid is nearly evaporated.
Add the peas, coconut milk, and curry powder and stir and cook a few minutes longer.
Cover and cook, stirring occasionally, for about 20 minutes or until the yam is nice and soft.
Sprinkle the cilantro over it when serving.
This is yummy straight, or with rice. Raisins or chopped green apple are really good with this curry, too.
