Sweet Onion & Mushroom Soup
5 medium to large onion (mix of red, sweet, etc)
175 grams of mushrooms, any kind (about 8 regular mushrooms)
1 tablespoon oil (I happened to use Truffle oil)
2 teaspoon brown sugar
1 cube veggie bouillion
water
tablespoon sun dried tomato tapenade (optional)
First heat the oil in a pot and add the chopped onions until they are slightly soft and brown. Then add the 2 teaspoon of brown sugar and caramelize them just a little bit.
Add the mushrooms and enough water until onions & mushrooms are just covered, and then add the veggie bouillion.
Leave on a low boil for about 10 minutes. Take out half of the mixture, put in a blender, and pulse quickly. I only do this to mix the texture up a bit, so its half smooth and half chunky. Then add the tapenade and leave on the low heat for another 5 or 8 minutes.
SO HOW'D IT GO?
Holy cow, this was good. I doubled the bouillon (and used Better than Bouillon "No Beef" flavor), and I did add about a teaspoon of vegetarian/vegan Worcestershire sauce. After cooking, I partially blended the soup with an immersion blender, right in the pot, and added salt and pepper to taste at the end. I did not use the tapenade, as I was just looking for a simple onion soup. The mushrooms added a great depth of flavor without overpowering the onions. (I ended up cooking the onions over low heat for about 45 minutes, stirring frequently, until they started to caramelize.) This is a definite keeper. Thanks for sharing!
I agree with the others that this is a yummy soup. I couldn't help but wonder why the recipe doesn't include any spices. So, I added some salt and pepper. I wanted to add worcestire sauce, but I was afraid it's not vegan. The recipe seems so close to what a French Onion Soup recipe would be like. I served it with some vegan bread and enjoyed. Especially good when trying to fight off a cold since it has onions and I added garlic as suggested by stars. Highly recommend!!

One of the best recipes I've tried on vegweb! This is a really, really yummy soup, perfect for fall. I didn't add any sugar or oil and added about a teaspoon of chopped garlic, and pureed the whole thing. Yum.
