Sushi Salad

What you need: 

2 1/2 cups rice (white or brown will work)
1/2 cup rice vinegar
2 tablespoon sugar
1 1/2 t.salt
2 avocado
1 medium cucumber (peeled and seeded)
1 medium carrot
12 lettuce leaves (Boston, butterleaf, or even napa are fine)
1 cup wasabi peas
1 sheet Nori (optional)

What you do: 

cook rice with directions on package. put it in a bowl and stir in vinegar, salt, and sugar and let it sit for about 10 minutes.
while it sits, cut avocado and cucumber into 1/2 inch or bite size chunks and shred carrot. stir all of the vegetables into the rice gently so you don't squish the avocado.
place a few lettuce leafs on each plate in a circular pattern . spoon rice mixture on top of each plate. top with crushed wasabi peas and crushed nori flakes!!!
just like sushi without the rolling!!!
