Superb Chili

What you need: 

1 roll Gimme Lean sausage flavor
1 medium onion, chopped
2 cloves garlic, minced
1 can tomato paste
2 14.5 oz. cans of whole tomatoes with liquid
1 15.5 oz. can black beans, rinsed and drained
1 tablespoon cumin
2-4 tablespoons chili powder
1 tablespoon cocoa powder
1 bay leaf
couple dashes of Tabasco chipotle pepper sauce -optional
cooking spray or oil
2 cups small pasta (I use rotini) -optional

What you do: 

Coat the bottom of a non stick (I use cast iron) skillet with oil or non-stick spray. Brown Gimme Lean over medium high heat, crumbling it as it cooks.
Add onion and garlic after Gimme Lean is browned and cook over medium heat until onions start to brown a little.
Transfer to a Dutch oven or other large pot and add tomatoes, crushing and breaking them apart with your hands, also add tomato juice.
Add rinsed beans, spices, cocoa and Tabasco. If using pasta add 1 1/2 - 2 cups of water to chili and then add pasta, cover and simmer at a very low boil for 10 minutes, stirring occasionally.
Finally uncover and if too watery, cook down for a few minutes more to consistency you like.
Eat, burp, and be happy.

SO HOW'D IT GO?

;D YUM YUM YUM...even by boyfriend who makes fun of me for being a hippie because I'm vegan loved this recipe! He had three bowls  ;D

Just wanted to add that my omnivore husband says this is the best vegan meal he has ever eaten, and will gladly eat this weekly (or more) for the rest of his life.  ;D
