Super Yummy Low-Fat Whole Wheat Oatmeal Raisin Cookie

What you need: 

1/4 teaspoon salt, optional
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
3/4 cup whole wheat flour
3/4 cup dry oats
2 tablespoons olive oil or 1 tablespoon oil + 1 tablespoon nondairy milk
1/3-1/2 cup sugar
1/4 cup unsweetened applesauce
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
3/4 teaspoon vanilla extract
1/4 cup raisins
1/4 cup nuts or seeds, optional

What you do: 

1. Preheat oven to 350 degrees F. Prepare a cookie sheet with nonstick spray or a parchment paper. Sift the salt, cinnamon, and baking soda into the flour and oats in a bowl. Stir to blend together. In a mixing bowl, beat olive oil (and/or milk) together with the vegan sugar.
2. Add in applesauce and egg replacer, and beat well. Add in the flour mixture and beat on medium until a semi-stiff dough forms. This dough will be slightly sticky.
3. At this point, add the vanilla, raisins and nuts (if you are using) and mix well into the dough. This step will require a little more strength because the dough is pretty stiff due to the whole wheat flour. Try to incorporate the raisins into the dough.
4. Drop by tablespoonful about 3 to a row. Flatten to about 3/4". Just keep in mind that this dough will barely flatten out when it's baking, so what you see is what you get, but don't flatten it too thin. You will probably get about 15 to a standard 9x13" cookie tray.
5. Bake in the center of oven for about 10-12 minutes. When done, remove from cookie tray and cool on a rack. It is very good just out of the oven and still slightly warm!
The finished cookie will look uncooked on the inside but that's because of the color of the whole wheat flour together with the applesauce, so don't be afraid to take a bite. Its pretty good for a low calorie cookie. Each cookie is about 80 kcal if using 1/2 cup vegan sugar, no nuts/seeds and contains about 1.5g fat.

SO HOW'D IT GO?

This is the second recipe I made from this website... and it was amazing!!!! I used a 1/4 cup of splenda sugar mix but other than that I followed the recipe.  Thank you soooo much for a healthy dessert!!!!!! ;)b

These were great! I strayed from the original recipe a bit though. I didn't use any apple sauce but instead used extra pureed tofu(i used this also as my egg replacer) and some extra soy milk. And, I used no oil. They came out on the dense side but still quite moist and delicious! I'm glad these are healthy because I ate 5 of them yesterday! This recipe is definitely one I will make again!

I am eating these right now and am in love!  Made them using sprouted spelt flour and left out the nuts and raisins.  Yummy in my tummy!

i know this is a silly question, but does this recipe call for regular whole wheat flour or whole wheat pastry flour? everytime i use my whole wheat flour i get a dense result

i think the recipe calls for whole wheat flour. that's what i used and it didn't seem too dense. i bet you could sub whole wheat pastry flour, though. or maybe use half&half.

YUM.  Pretty flavorful for an oatmeal cookie (and a low-fat one, at that).  I added a bit more cinnamon to mine, threw in some nutmeg and walnuts, and used flaxseed and water as my egg replacement.

These were so good :D.  I doubled the cinnamon and the vanilla essence (love the stuff) and I used half a cup of raw sugar and chopped nuts.  I used spelt flour as I can't handle normal wheat flour.  So how many calories if you eat them all ::)???  I hope these last till work tomorrow.

This is so good - deceptively so, since it is so low in fat! I did what another reviewer did and subbed ground flax seed for the oil. I also added 1/2 tsp nutmeg and 1/4 tsp of ground cloves. Next time I might add some shredded carrot as well. Thanks!

I love these.  I'm still trying to figure out how to make them a little firmer, but for being so lowfat...I have no complaints!  They're great...so far I've made oatmeal raisin and trail mix versions.

They look delicious and  i just popped them out of the oven! I cooked them for 14 minutes and they didn't really brown but they look moist and very chewwy. Instead of the oil i added to the applesauce and I used 4 of those tenny boxes of raisins which are like 1/2 oz; I didn't add nuts and i used 1/3 cup sugar they were a little sweet but oh well i should have listened to the others. I also used the vanilla extract idk i really wanted to make them yah know idk if there is a difference. i made ten cookies so they were each 106 calories very good for a cookie as far as i know. I liked this recipe it is healthy and has iron and whole grains and i don't consider it a cookie because i don't like cookies generally.
