super simple South-West soup
1 (16oz) can diced tomatoes
1 (10oz) can tomato soup
1 (16oz) can sweet corn
1 (16oz) can black beans
tsp of chilipowder
crushed chili flakes (as desired)
salt (to taste)
pepper (to taste)
*I served mine with a scoop of rotini pasta. I highly recommend this, it was quite a nice addition to the dish!
If you decide to serve yours with pasta as well, use 1 cup of rotini and a small pot for boiling the water in.
-On stove top in a medium-large pot, add diced tomatoes, corn, beans, and tomato soup. Stir ingredients together until well combined.
-Heat at medium-high and stir occasionally. (if it starts to boil turn the burner down, it shouldn't be boiling)
-Add the chili powder and chili flakes as desired, as well as the salt and pepper. Stir and let simmer on low-medium heat for at least 5 minuets. Serve over a small scoop of pasta, or just serve it as soup.
If you decide to serve yours with pasta;
-add 1 cup of rotini (or whatever pasta you like) to a small pot of boiling water. I did this mainly while the soup was simmering. Let the rotini boil for about 8 minuets or until tender, then strain over a sink.
*This is a very simple recepie so feel free to get creative with it! Not to mention it's super cheap and you probably have the ingredients already lurking somewhere in your pantry. Yay for poor-man's cooking!
