Starving College Students Perfect Dinner

What you need: 

1 cup rice
2 cups water
1-14oz. can whole peeled tomatoes
A dash of salt
2 dashes of ground black pepper
Liberal amounts of oregano, chili powder and garlic

What you do: 

Put water and salt on stove to boil in a medium saucepan. When water is boiling add rice, spices, and tomatoes with the juice included. (Crush the tomatoes in your hand first, though.) Cook until rice is done.

SO HOW'D IT GO?

I thought that this was a great recipe base.

I added chopped onion, mushrooms, a can of sweetcorn, spinach, cumin and a dash of lemon juice.

It was quite tasty & I'll definately use this again if I'm in a rush - it took 20mins from start to serving, brilliant!!  I would definitely recommend for a tasty, quick dinner.

Oh and mine made about 4 servings, not 2 like the OP stated.

I wish I had a pic of this! It's so cute just sittin in it's pot on my bedside table on top of notes and books.
I added some corn and skimped on seasonings because I didn't have any, and substituted vegetable broth for water.  Maybe everyone else needs something more filling, but this is perfect for me.  I'll probably add something green next time, but I'll definitely be making this a lot (so inexpensive and quick)
