Sriracha Sweet Potato Soup
What you need:
3 medium sized sweet potatoes, peeled
2 medium carrots
2 cans coconut milk
2-4 cups water
1 medium head cauliflower
sriracha hot sauce
2 Tablespoons ground ginger
1 Tablespoon chopped fresh ginger
1/4 cup peanut butter
1/2 yellow onion
What you do:
Clean, peel and chop all vegetables into bite sized pieces. Brown the onion slightly in a large pot, add the carrot and sweet potato along with the 2 cans coconut milk, and ginger. Simmer 20 minutes until potato is soft. Either use an immersion blender to puree, or carefully ladle batches into a blender and put back into the pot.
Add the chopped cauliflower, nut butter, and enough water to cover. Simmer for 10 minutes. Add 2 Tablespoons sriracha, or to taste.

This soup is absolutely FANTASTIC!! I've made it 3 times in the past 10 days and I'll make it again for Thanksgiving dinner. I did swap out the canned coconut milk for coconut milk that comes in a carton, and I added 1 tsp salt after blending. This has become a staple in our house!
This is dee-lish! But, I wonder if there is any way to lower the fat/calories from all the coconut milk. Any ideas?
You could also try replacing half the coconut milk with regular soymilk
or unsweetened almond milk-only 40 cal per cup!

i made this last night w/ou the peanut butter and only one can of coconut milk and it was still yummy! i used veggie stock to replace the other can of coconut milk, and i added a bunch of ground corriander :)>>>
You can use "lite" coconut milk. It definitely has less fat and fewer calories. They sell it right next to the regular coconut milk.
