Squash-Corn Fritters!

What you need: 

2 squash, grated
1/2 cup corn, drained
1 egg substitute (I used 1/4 cup flour + 2 pinches baking soda)
2 tablespoons olive oil
1/2 cup flour
2 teaspoons onion powder
1 teaspoon sugar
1/2 teaspoon salt and pepper
1/2 teaspoon curry powder
1/2 teaspoon cayenne pepper
bread buns, to serve
1 tablespoon olive oil

What you do: 

1. Mix all ingredients (except buns and oil) together. Form into desired sized patties.
2. Fry in olive oil until golden brown on each side.
3. Put it on a bun with some hot sauce and you're ready!
This is a very easy and fast meal. Its filling and so delicious!

SO HOW'D IT GO?

:'(  This was not nice!!  I have become accustomed to trusting the ratings but should have known when there were no reviews.  This turned into a huge mess.  The taste would have been nice if there was a dry ingredient to actually form the fritter.  This turned into a huge glop thanks to the the flour being considered as a dry ingredient.  There should maybe be a flour plus egg sub and I am thinking that the squash should be patted to remove the moisture.  This was a nice thought and the spices worked well with the squash and corn but a fritter it did not make!
