Split Pea Gravy

What you need: 

1 onion, chopped 2 garlic cloves, chopped
2 tablespoon balsamic vinegar
2 tablespoon apple juice
1 cup yellow split peas
2 cup water/stock
1/3 cup carrots, chopped
1/3 cup celery, chopped
1/3 cup other veggie, chopped (yams are nice)
1 tablespoon garam masala
salt and pepper to taste
1 tablespoon turmeric

What you do: 

Saute onion and garlic in vinegar and apple juice till browned Add all else Adjust seasonings (you can change spices according to your tastes) Simmer 30 minutes, stirring occasionally Serve hot over brown rice
Alternate: steam the 1 c. of chopped veggies in with the cooking rice. If you like, plain yogurt is nice on this
