Spicy 'Irish' Soup

What you need: 

1 medium red potato chopped
1/2 medium cabbage head, shredded
1 can of veggie stock
1 package Boca crumbles
spices (any you like but pepper is a must)

What you do: 

In a med-high heat pan put about 1/2 cup of veggie stock and brown the Boca 'meat'.
While that’s browning, cut up a red potato, throw it in, and top it off with about another 1/2 cup of veggie stock.
Season this with salt, garlic powder, and quite a bit of pepper (gives it its heat) and any other spices you find laying around.
While that is cooking together, shred half a head of cabbage. Throw that in, and top it with the remainder of the veggie stock, and season that layer. Let it bubble for a while, then add in 2 cups of water. That’s it!
It cooks up so fast. The longer it cooks the better it tastes. You can leave it simmering away on the stove all day on a low heat. Any of these ingredients can be adjusted too. I make a pot for myself and have a lot of leftovers. It’s very low fat/ low cal. and it’s so yummy.
I get about 3-4 servings out of this. Each serving has no more than 120 calories. Give this a try!
