Spanish Slaw

What you need: 

1/2 large white cabbage, shredded
1/2 cup sultanas or golden raisins
1/3 cup balsamic vinegar
1/3 cup olive oil
1/4 teaspoon ground cumin
1/4 cup pine nuts
sea salt, to taste

What you do: 

1. Soak shredded cabbage in a bowl of ice water for15 minutes to remove the sharp taste, then drain.
2. Soak the sultanas in warm water to plump them, then drain and chop.
3. Dressing: In a bowl, blend together balsamic vinegar, olive oil, and cumin. Add sultanas.
4. In a bowl, combine shredded cabbage and dressing. Mix in pine nuts and salt
5. Chill before serving.

SO HOW'D IT GO?

I totally changed this around to fit what I had.
I followed the recipe but used:
Raw Almond slices
White Balsamic Vinegar
Regular Raisins
cumin+ dash habanero powder (it's like ground red pepper)

I'm letting it sit overnight to absorb the flavors but so far I'd say yum!
I'll add a bit more cumin next time and be sure I shred the cabbage much better.  :)
I think a nice addition might be chopped apples...? But that's just me!
